Bromelina is an enzyme with proteolytic action for a better assimilation of the amino acids that compose it. Bromelina breaks down proteins in the same way as pepsin, an enzyme that is part of gastric juice. It is found in pineapples.
Bromelina has the following applications/functions:
1 .Adding Bromelina to the dough can degrade gluten, and the dough is easy to process after being softened. And it can improve the taste and quality of biscuits and bread.
Bromelina hydrolyzes the large-molecule proteins of meat protein into small-molecule amino acids and proteins that are easily absorbed. It can be widely used in the finishing of meat products.
In the application of Bromelina in other food processing industries, some people have used Bromelina to increase the PDI value and NSI value of soybean cakes and soybean flour, so as to produce soluble protein products and breakfast, cereal foods and beverages containing soybean flour. Others include the production of dehydrated beans, baby food and margarine; clarification of apple juice; manufacturing of soft sweets; providing patients with digestible food; adding flavor to daily foods.
